This week’s topic is one of my favourites. We’re sharing holiday recipes!

About three years ago, we began a new family tradition. My mother, two daughters and my son’s girlfriend get together at one house a day in early December to bake. Each of us is in charge of one recipe, but we all go home with a sampling of everything. It’s a great way to have treats for the holidays without doing all the work yourself!

My responsibility is butter tarts. These are so easy to make (especially if you use store-bought pastry shells like I do) and so delicious.

1/3 cup butter
1 egg
1 cup brown sugar
2 tablespoons milk
1 tsp vanilla
½ cup raisins (optional – see note below)
premade unsweetened tart shells

Soften butter to room temperature to make it easier to blend. Combine first 5 ingredients using a hand mixer. If everyone in your house likes raisins, you can add them to the mixture now. If not, add a few raisins to some of the tart shells and leave others empty, then pour the mixture on top.  (For a more adult version, soak the raisins overnight in rum before using.) Fill each tart shell 2/3's full.
 
Bake at 350F for 15 minutes or until edge of tart shell is golden brown.
 
This recipe makes about 15 tarts. If you want to hoard them, they freeze very well.
