Share a favourite summer recipe.

I may have shared this before, but it is well worth repeating as it is my all-time favourite pasta salad recipe. It keeps for a long time and is so easy to prepare. 
It is from 365 Great Barbecue and Grilling Recipes. Enjoy!

SUMMER TORTELLINI SALAD

3/4 pound cheese-filled tortellini
1/2 pound green beans, trimmed and cut in thirds
1/2 pound cherry tomatoes, halved if large

Cook tortellini according to package directions. Drain and rinse under cold water.
Cook green beans in boiling water until tender. Drain and rinse under cold water.
Mix all three ingredients together and toss with Creamy Vinaigrette Dressing:

1/4 cup white wine vinegar
3 tbsp fresh lemon juice
2 tbsp plain yogurt
1 tsp Dijon mustard
2 large garlic cloves, crushed and minced
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1/2 cup olive oil (or flavourless vegetable oil if you prefer)

Mix all dressing ingredients in jar with lid. Shake well to blend. Can store in fridge up to 5 days.

(NOTE: I only use half the dressing on the salad, then use the rest up as a marinade for chicken or shrimp later in the week)
